Oh, to live at Jackalope: the stunning boutique hotel set in the rolling hills of the Mornington Peninsula, where you can watch the sun set over the vines, and take all of your worries with it, all from the comfort of the infinity pool. Named after a mythical jackrabbit-meets-antler whose enormous sculpture will greet you on arrival, this luxury hotel has excited us for more than just its lush green grounds.
While you may not be able to move into this wine-filled wonderland (yet), you can drop your things and stay a while as you explore everything the region has to offer.
There are two restaurants on site: fine wining and dining paradise Doot Doot Doot, which sports one hat and a short tasting menu that packs a mega punch. Go for the wine pairing because, location considered, it would be rude not to. Then there's Rare Hare, a more casual spot with glass windows for lunchtime views and an open fire for all-day sharing plates along the large communal timber tabletops.
There's also the cocktail bar, Flaggerdoot, which of course is the collective term for the aforementioned Jackalope. Here, it's gold-adorned chairs and pure alchemy from the wizards behind the bar.
As if you needed more reasons to never leave the hotel (but, you should for a bit at least), there's a seriously special spa onsite with treatments like pinot grape body scrubs. All available in your room, of course.
